I love Friday night’s. This is the night that everything shuts down, computers, busy work etc. and I get to spend time with my son and my husband. Tonight we are doing a movie and pizza. I have the greatest pizza recipe ever. Okay actually two recipes, one for the kids, and one for adults.
Vegan Cheese Pizza
1/4 loaf country French bread
1 cup Italian Tomato Sauce or your favorite vegan pizza sauce
2 tbsp olive oil
2 cloves garlic
1 tsp herbes de Provence
2 cups grated vegan mozzarella cheese
Preheat oven to 425 degrees. Take a country French bread loaf from your local bakery and slice it length wise into four slices. Mix olive oil, garlic and herbes de Provence in a small bowl. Spoon olive oil mixture lightly over one slice of the French bread. Top with spaghetti or pizza sauce and cheese and bake in the oven for about 10 minutes or until cheese is melted.
Mediterranean Vegan Pizza
1/4 loaf of country French bread
4 tbsp olive oil
3 cloves garlic
1 teaspoon herbes de Provence
1 roma tomato, cut into small cubes
6 pepperoncinis, sliced
1 jar marinated artichoke hearts, diced
1/4 red onion, sliced
1/2 cup vegan mozzarella cheese
Preheat oven to 425 degrees. Take a country French bread loaf from your local bakery and slice it length wise into four slices. Mix olive oil, garlic and herbes de Provence in a small bowl. Spoon olive oil mixture generously over one slice of the French bread. Top with tomato, pepperoncinis, artichoke hearts and red onion. Sprinkle the top with mozzarella cheese. Bake in the oven for about 10 minutes.
Nothing is better than popcorn to top off the night with a movie. I have sweetened the popcorn to make it extra special.
Vegan Dessert Popcorn
6 cups airpoppped popcorn
3 tbsp olive oil butter
2 tbsp maple syrup
1/2 cup whole cashews
Make popcorn in an airpopper (it is much healthier this way). Heat olive oil in a stainless steel pan and add cashews. Saute for about two to three minutes. Add maple syrup and cinnamon and saute for another 4-5 minutes, until the mixture starts to thicken and become sticky. Pour mixture over popcorn, mix and serve. This is one the kids are sure to love.

You’re so a woman after my own heart!!! Love both of these snackiepoos… I wish I had nights off… they’re rare for me. Good for you to relax and enjoy!!
