Tried the recipe today. My first time ever making macaroni salad. It was AWESOME! I'll never buy store bought again. Very easy and tasted amazing. A diabetic (like me) can replace the sweet relish (no sugar added sweet relish from Mt Olive) and enjoy many, many helpings!

I made this today but added a couple of crisp chopped green apples to it. That is how we ate macaroni salad when I was living in Africa. I have to say it was absolutely delicious! Thank you so much for this vegan version of an old favorite. I have been missing foods like this since I made the switch.

I'm trying this tonight, but I'm going to add a few scoops of mashed potatoes into the mix (the Hawaiian way) for extra texture.

[...] Boy, I have been a bit out of touch this week. Had some unforeseen stressors at home, but am clear-headed again and ready to greet the world. Hope everyone had a great 4th of July (for those of us in the U.S.) I spent the day with my family (source of stressor) and we went to see the fireworks. My son had a blast and thought it was the greatest thing in the whole world. We barbecued good ole American hotdogs (okay so mine were vegan, still American as far as I am concerned). Made my macaroni salad again. Why because I really and truly did love it. Nobody in the whole world could tell that it was vegan. I had a ton of cucumbers from my garden that I needed to use so I also made a cucumber and tomato salad that was easy, refreshing and delicious. The colors were vibrant and awesome. The basil for the salad also came from my garden. I also made a mint limeade (kind of like a mohito without the alcohol). At least I enjoyed creating recipes and spending time with my son.
Ooooooooh, i'm so curious how it went!!

Today i went to this Hawaiian restaurant and ordered the only veg thing there, some tofu that was awful that came with a scoop of awful sticky icky rice and macaroni salad (which of course i passed on, so they gave me two scoops of the worst rice i've ever had, but i was hungry so i ate it). And girl, seeing this recipe... if only they would have had this. It looks so good... i would never eat macaroni salad unless it was like yours!!
